I have several RPs that I have set up but never got enough people joined to run them. I will list them and if there is enough people interested in one of them, I’ll start it.
Is there any interest in any of these RPs? Also is there any way to hide most of the information? I mean like in a hider or spoiler.
Dual
There is a past and present of this RP. The basic plot is to see whether or not these "Vampire" Humans can live with 'Normal' Humans.

Transylvania
This is a vampire village type of an RP where some young vampyres were kicked out of their village for drinking animal blood. These young vampyres are now traveling back to the village and to reopen it.

An old sea captain has nothing to do but stare out into the wide open ocean. He sees it is just like his life at the moment. Nothing to do since he retired five years ago. He picked up his cell phone and called his best friend to see what he was doing at the moment.
After a lively chat, a decision was made. Both of them would go back out to the open water as Captain and Cook for a new company. They would take the small charter cruise ship and start a special Cruise for Singles. They would travel around the world again.

Holy moly that's a big list!! Perhaps part of the reason that interest is low is because it's a lot of information that is very difficult to read through?
You can use the collapse tags to put the whole thing into sections, like so:

Yeah I love reading, but I almost went to the back button when I saw all that text. 
If I may add to Sanne's suggestions, I would suggest writing a brief summary that people can quickly read to see if it interests them or not. Then the ones that are interested can look over the rest of the information you have. After all, that's a lot of reading for something you may not be interested in.
