Eyes: Bright ice blue, and nearly blend in with her scleras, which tend to freak people out; She used to be quite insecure about these when she was younger, but she's grown to love how unique her eyes are as she's gotten older.
Hair: Before Cerberus rebuilt her, Sawyer's hair was deep black, usually kept at her low shoulder blades at the longest point, and usually seen pulled back into a tail or a bun.
However, while Cerberus was rebuilding her, due to lack of time and focus on more important aspects of her person, Sawyer's hair wasn't prioritized. As of being rebuilt, her hair is 'naturally' a stark white. Kept to her shoulder blades at longest, still it's naturally slightly wavy straight texture as before. Now, however, Sawyer tends to leave her hair down around the ship, though often pulled up into a tail, whether in important meetings or not.
Height: 6'4 - she's... a giant.
Body Type: Fit, athletic, with a subtle pear shape to her body; Sawyer has smaller b-cup breasts and slightly wider hips. Long muscular legs that carry her in long graceful strides. Her posture is ridiculously perfect, at least when walking or dealing with meetings. An elegant elongated neck and a deep set collar bone. While not a complete beef steak, she does have a good amount of muscle on her form and keeps herself fit and in top condition.
NSFW: Shaves her legs and armpits for comfort's sake, though only on a semi-regular basis (when her legs start to get itchy, and her armpits about once a week or so); She doesn't care to shave her groin, doesn't honestly feel there's a point to it. Large clitoris, large puffy inner and outer labias.
Skin: Tends to be on the paler end of the spectrum, as she rarely gets any 'true' sun so to speak.
Marks: Freckles speckle her cheeks and shoulder crowns
Scars: Had a huge scar across her face due to the situation in Akuze, and while she originally had something of an issue with it, it grew to become a reminder and a trophy representing her survival.
It wasn't kept during her resurrection via Cerberus.
However...
While her scar was removed (or, rather, not added) during Project Lazarus, midway through the events of Mass Effect 2, Sawyer ended up having a real identity crisis about who she was post resurrection and who she might have been since Cerberus re-built her. Sawyer, eventually, took one of her 'off' days that wasn't packed full of missions to give herself her scars back.
It was a slow and painful process, and everyone on the Normandy looked at her a bit weird when she came out of her quarters a few days later with such a huge wound across her face, but this eventually scarred over into something that most people assume to be her original scars; Her crew members, while they know the truth, honestly can't tell the difference. She can, but it at least helps a little...
Sawyer refused to let anyone take her to the med bay, wanting these scars to heal naturally. She needed these both as a reminder that she was, in fact, still her, and still human... not some machine made for Cerberus' own gain.
Clothing: Around the Normandy or in casual relaxed settings, Sawyer's usually just wearing a tank top, tighter pants, and usually her armor boots; She likes the 'aesthetic' that the boots give to her overall outfit. If she needs a jacket, it's (faux) leather and bright red or black.
Jewelry: Just her dogtags.
General Personality: Quite a friendly personality and easy to get along with. Sawyer has a generally lax personality and tries to talk with people in more of a "Ask questions first, shoot later" way of going about things. Certainly Sawyer is willing to get the job done where necessary, but she prefers to talk things through where possible.
She has a good sense of humor, with a touch of sarcasm here and there, and prefers to see the best in people. Where possible, she likes to put the needs of the many ahead of the needs of the few, though certainly sometimes her ideals don't always work as well in practice as they do in theory. The incidents always weigh on her more heavily than they might on most people.
A hopeless romantic who likes to dream of a apple pie lifestyle, though she knows that in action she'd actually hate having such a life. As relaxed and chill as Sawyer can be, she craves adventure and freedom, and loves the stars too much to leave and settle down in any one place for too long, even if it's a ship floating around a star system. She never gets tired of traversing the galaxy.
It's pretty easy to find out who Sawyer doesn't like once a person gets to know her. If you're friends with Sawyer, she's really relaxed, unprofessional, and just fun. If she doesn't like you, she's going to act very political, calculated, and polite to the point where she almost resembles a robot.

Sawyer is a huge history / culture nerd, which is probably the reason she's so diplomatic most of the time, and probably is the reason she seems to be able to put up with Udina's shit. She gets how politics work and how many ripples one small action can cause in the grand scheme of things.

Headcanons
:: Sawyer actually taught Garrus how to use a sniper rifle during the events of ME1. This is when they grew close... He kind of rubs it in her face that he's better than her come late ME2 / ME3 events, but she doesn't mind, she's proud of him.
:: In ME1, Sawyer and Garrus definitely had more of a commander / subordinate type relationship, despite Sawyer's best attempts at pushing friendship, Garrus just didn't seem to really grasp what she was pushing. Come ME2, he was much more lax however, so he and Shep just sort of melted into their friendship pretty easily.
:: "I'm not gonna pretend I have a thing for humans" isn't something Sawyer agrees with, in that, she totally has a thing for Turians (it's the height, honestly) and Quarians.
