One-Pot method!

Note: Please make sure ahead of time you have all of your ingredients ready to go. This isn't an Italian dish, so some of the seasonings may not be your favorite, in which case I recommend you use what you love most.

Ingredients:
1 tsp Smoked Paprika
1 small shake of Cayanne
1 small shake of Ancho Chili
1/8 cup olive oil
1 diced medium sized onion
2 diced celery stalks that have been cleaned, and free of leaves ahead of time
1 thick Porkchop, diced and excess fat and gristle removed
2 small polish sausage (Or whatever sausage you prefer)
16 oz spaghetti (you may have to substitute this for another pasta, depending on the size of your instant pot)
2 cups Marinara sauce of your choice.
1 cup Chicken broth/stock (organic is best, but don't worry about salt)
2 cups water for reserve (The amount will vary by taste and size of the instant pot)
3 tablespoons kosher salt (this is for reserve and for the taste to add as you go)

First, set your instant pot on "Saute" and place into it the olive oil, ancho chili, cayenne chili, and paprika. Stir this constantly until just simmering, and the seasonings have become one with the oil.

Add a tsp of the kosher salt, and make sure to incorporate thoroughly into the mixture.

Now add the diced Porkchop and sausage pieces and stir constantly. Set a timer and do not exceed 3 minutes, or the pork and sausage have a nice coloring. They should not be fully cooked. If they start to overcook, turn the
saute off until the time is reached.

(Turn the saute back on if you turned it off.) Add onion, celery and let the mixture come together with stirring and continue this until the onions are just starting to become translucent. Make sure everything is covered in the mixture. At this point, you will see stuff sticking to the bottom of the instant pot; that's plenty okay. You want that goodness for the next part.

Deglaze the mixture using your spatula or stirring spoon with the chicken stock or broth. Stir constantly until everything has come off the bottom of the pan and the mixture has fully incorporated.

Turn the instant pot off entirely.

Add the marinara of your choice and stir the mixture in. Pay attention to the size of your instant pot. The mixture should make enough to get you 1/4 of the way up. If it does not, add water or more sauce (if you want) until it's about 1/4 of the way up. Stir until the entire mixture is consistent and taste it.

At this point, you need to pay attention to taste and how it is for your pallet. Does it taste salty enough? Does it taste like it needs more. Taste and add more salt to your tasting preference. Adjust accordingly but try not to go past the 3 tablespoons.

Now that you have it seasoned and stirred. Take your pasta and look at the directions. If you made homemade pasta, you want to remember how many minutes you need Al Dente for that pasta. If you are using purchased, you need to look at the directions.

Depending on the packaging and your personal enjoyment of toothsomeness, put the pasta in and make sure the mixture goes over all of it. If it's too long, you may have to break it up. That will depend on the size of your pot and how much mixture you have. At my house, we generally break them in half.

Once the pasta is in the liquid and the mixture is set, set your manual control on your instant pot to whatever Al Dente is, minus 2 minutes. If the package says "Done in 10 - 13 minutes," the Al Dente is 10, so set your pot to 8. We are going to use these numbers for the instructions to help cut down confusion.

Be sure your valve is on properly, your condensation cup is on, and everything is secure. Now comes the waiting game.

It takes time for the pot to build up pressure, but at some point, you will see the red pressure button go down, and the instant pot will hit 8 minutes on its dial and make a beep. Then let it go!

When 8 minutes is up, turn the pot off, and turn your valve to let the pressure out. This takes about 2 minutes. When it is done, undo the lid and stir. You should have perfectly toothsome pasta with delicious pasta sauce and meat all cooked to perfection.
