I wish we could share a bit of what do we eat, names of recipes, or simply home-made special dishes YOU DO without a special name.

I just wish to widen my horizon since I'm now interested to cook anything and everything!

Honestly cooking is kind of an adventure for me. I've got some dietary restrictions, but since I sorta leaned into them I've discovered a lot more delicious, easy recipes than I knew before.

Stars of the show lately -- bone broth, pear-and-beef stew, fried chicken salad, coconut shrimp pasta, smoked pea soup... we eat pretty good over here.
One of my favorite things to have as a side dish is battered zucchini slices. My mouth is watering just thinking of it...! However since we are a household of four (including a child) with rampant allergies and various sensitivities, we always make our batter from scratch! Ideally I would put these with some grilled goodies, or baked chicken breasts. Sometimes, I'll fry the zucchini while a crock pot slow-cooks the meat of choice, so that when it's done you can shred the meat with a soft spoon! Man, that's the best kind of meat. Tender.

We also have a 'one man' grill for our balcony, capsule apartment ftw, where I might sizzle up some squash, beef, maybe lamb or fish on some tin! We eat loads of veggies here; radishes, brussel sprouts, squash of all sorts, broccoli, peas... and since all of us share an inability to eat potato products or tomatoes, we like to fancy up our experiments! For instance we made a "no-'mato" sauce that tastes just like tomato paste, and we make pizzas with it or soups, pasta topping... Maybe I can share the recipe. Be warned, you'll need time for it! It's well worth the effort, though.

You sounds like a battered veteran, I'm afraid I'll miss most of the dishes you do, and if it takes times, I rather not try it. :/ Actually, I'm a pretty blue-handed beginner, and even as I try to widen my horizons, I stick pretty much to this golden rule of mine : easy, simple, and quick. I would be glad to hear about some "alternatives" dishes anyways, as using specials vegetables, and the like. ^^ Thank you for your time.
Well hey, try this easy side, by all means. It was one of my very first and it's so hard to mess up. Take some small radishes, clipping off the ends but leaving the pink skin, and slice them. Then, toss them into a buttered pan with some diced garlic and onion to sautee together. They put a nice flavor, not so much a spice in my opinion, and if you mix them in with some quinoa or rice, it's great with diced chicken. Personally, I like a little spice, so I might throw in a few dashes of cayenne pepper with the meat or some sriracha! There's no way to really go wrong. And don't buy into those who say you need anything fancy to make battered goods. :) I use a bit of extra virgin olive oil in a small pot to fry my stuff, and it is so easy.

Also, if you want to have 'light' meals, always opt to skip the sauces like marinara and alfredo and use a little olive oil instead! It's awesome for pasta and chicken with peas, kind of a one-pan deal too!
