First off, I tried these granola sandwich bars that used coconut butter and it was amazing. So I was like...I wonder what coconut butter cookies will taste like?

So I'm going to take the peanut butter cookie recipe my mom uses and switch out the PB for Coconut Butter and shredded coconut for texture. Going to try this thursday so I can take them to a big family picnic on Friday.

Edit: Well I had to make do with a coconut spread instead of true coconut butter, but regardless, they turned out to be delicious! I also added chocolate chips at my mom's recommendation which made them even better!

I used a peanut butter cookie recipe from Betty Crocker as a base, but it was from an old cookbook, so I don't know if that recipe is online. I replaced the peanut butter with the coconut spread, but used more then what the recipe called for by an extra 1/3 cup. I also added shredded coconut for texture and added coconut flavor. I threw in a 1/2 cup at first, but upon tasting the dough, decided that it wasn't enough and threw more in without measuring.

Now as my coconut spread had shortening in it, I added less shortening then what the recipe called for to make up for that. Lastly I threw in 1 and 1/2 cups of chocolate chips. I chilled the dough for about a half hour then then rolled the dough into small balls by hand before baking them on cookie sheets. Like this the yield was 40 cookies.

Lastly I consider this to be the rare cookie when they taste better after they have cooled down as to me the coconut flavor was rather weak when they were fresh out of the oven. Though it seemed to come back once they cooled off.
