Hi!! I haven't seen a topic like this--so forgive me if any has been made. But this is a topic to talk about anime. Reviews, recommendations, or just plain gushing over characters.

Dragonball Z is pretty much the end all argument when it comes to anime: between its thought provoking plots and heart warming character development, you can't go wrong. Not once will you feel like you're watching something that reverts to the same basic formula over and over just to hook your attention or that Akira Toriyama might be grasping at straws - not once.
When I watched it growing up, I couldn't comprehend the insane attention to detail with the plot. Between struggling with his own wants and desires, Goku must decide what is better: defending the earth once more himself, or let the younger generation have a shot so they can become stronger. It brought a tear to my eye knowing that he just wants to be with his wife instead of propagating endless violence over and over.
The special effects are stellar, not to mention done in an expedient time frame. A spirit bomb building up? You can do that in a few minutes. Need a super saiyan sized Kamehameha? Give me a sec, coming right up. None of that multi-episode buildup crap that you see in modern anime.
To sum it up, Dbz is a must watch. I'd give it AT LEEEAAASSSSTTT a 9.9/10. Between the sparking characters and soulful plot, not to mention the well placed story arcs and total lack of filler episodes, Dragonball always leaves you satisfied at the end of the day.
On a serious note: I used to watch tooons of anime whenever it was on toonami, and for a few years I was a massive fan. Dbz is my favorite - it's the first one I ever saw and I can go back and watched it to Crack up at some of the lulziness it has (>9000). I haven't seen much newer stuff besides Naruto/Naruto Shippuden, Bleach, Tengen Toppa Gurren Lagann, and a few episodes here and there of Soul Eaters and Sword Art Online. Old school is my preference, mostly because I'm a dinosaur these days. I feel like new stuff is mostly about advancing art style, not plot development, but I haven't really given much of it a chance.
I don't watch it much anymore, but if I had to recommend some series it would be:
Trigun
Mobile Suit Gundam
DragonBall (much better than Z as a story driven animu, good for some laughs)
Cowboy Bebop
Outlaw Star
Zoids
I know there are some huge anime nuts here, hopefully they'll chime in.

It's interesting that you say the '90s/2000s stuff is old school. I wonder where that puts the really crusty 80s stuff like Macross, Cyborg 009, Lupin the Third, and Mysterious Cities of Gold. Using comic language, I guess you could say that the 90s stuff was the "Silver Age" of anime. Definitely my preferred zone too. I just can't keep up with these wacky new shows the kids watch nowadays!
Macross was awesome, also love Cyborg 009. But we must go deeper: the original Astro Boy. As far as I know, it is was most would consider the first anime. Also, I forgot to add to my list:

Well, it is getting a little long in the tooth. The 90s were, at the earliest, 15 years ago and a lot of the stuff the USA got (could be different for Australia, Europe, etc) didn't arrive until the mid to late 90s. Dbz aired originally around 1992 in Japan, but we didn't start getting good dubs until I think 1997-1999. To me, the late 90s to early 2000s was the best stuff because the dubs were super on point, the animation was good, and the plot was a little thicker than WE MUST FIGHT DA EVUL. To be fair, I know there is more mature and adult oriented anime out there, but I haven't gotten around to see it. Maybe I should.
