I've not written for a centaur of any depth personally, but I did include them in the worldbuilding and lore of my primary fantasy setting- and they continue to persist beyond that, but that's another rant.

The cities built by and for them tended to accommodate a great deal of variety, as the Alliance consisted of many 'monstrous' types of individuals; Goblins and Orcs could reside in more standard districts, with Lamia, Centaur, and Trolls often sharing similar enough sizes and characteristics to build in overlapping/adjacent ways, Harpies and Dragons living in spires or towers, as well as a number of underground methods for each... and so on and so forth.

Centaur communities tend to be nomadic outside of those shared settlements, as tents and the like are quite sufficient and easy for them to carry, and I always believed the heart of a horse- and indeed a centaur- desires the open freedom to roam. The ease by which Centaurs can travel, forage, and survive, makes them commendable explorers in most environments. And they are also fierce in war, though the pros and cons when compared to conventional cavalry is another entire discussion on its own.

In modern media I think a lot of what would be Centaur culture tends to end up in either Elvish or Fey camps, depending on the setting. There is also the simple fact that most of our more appealing/popular fantastical creatures are either humanoid enough to be relatable and (conventionally) attractive, or monstrous enough to be awesome and (unconventionally) attractive. Centaurs, like Harpies, Lamia, and other mythical quasi-humanoids, are an odd middle ground that just doesn't catch the eye as well to either majority... though I do believe they have their interested parties too!
