This probably goes without saying, but Jimi Hendrix's cover of Bob Dylan's "All Along the Watchtower" is exactly what a cover should be. He doesn't just rehash the same song in a slightly different way, he makes it entirely his own. The two sound completely different, in the best possible way. I'm of the opinion that the Hendrix cover is better than the original, but I'll let you all decide for yourselves.
