Heya! I’m low on ideas of mythological creatures related to the sun. All I want is a mythical creature that ISNT a phoenix. And I mean mythical CREATURE and not DEITY, please!

Well, there's always dragons.
But... yeah, it is tricky to find mythology about the sun that doesn't involve the sun being some sort of deity-type spirit or just being an object that other beings steal or complain about, etc.

The sun is creator of life and destroyer. The sun is in the middle of any mythology and many animals are related to the sun, if it is Raven, Wolves, Dragons (Lizards) or just Ladybugs (sunbugs in German).
Crows. No really there's lots of stories of the crow being associated with the sun

Sköll is a giant wolf that pursues the sun in Norse folklore; it aims to devour it on Ragnarok. Not technically a deity but it is an individual.
Crows and ravens are sun-stealing tricksters across many indigenous folktales; Mesoamerican folktales include jaguars and condors.
The Grecian phoenix has analogues all over the world; offhand the one that comes to mind is the fenghuang of China (and Japan) - though there are all sorts of other associations in addition to the sun and most are dual natured or paired with dragons, to the tune of yin and yang, masculine and feminine, etc. (so if you’re doing a Fantastic Beasts type thing where these guys are found as a knowable species, this one might be a little too loaded for that).
Simurgh is a mythical chimeric species from Iran, and while it’s more themed around being a bridge between the land and the sky, it also resurrects by fire similar to the phoenix (if you want to lean more in that direction).
Broadening to stars/fire might net you more results? It depends on what you’re doing!
