Yay! I unlocked a clue! Anyway, I think it would be easier if the third clue was revealed. I also believe that it may have something to do with either "Sword in the Stone" or the video game series "Dark Souls". That's just a feeling I have...
A stranger uneasy to ride...what in Oblivion is that supposed to...wait...could it be related to the Lone Ranger, by any chance? Silver, the horse?
Are you talking about the TV series "The Lone Ranger"/the movie with Johnny Depp?
This could be referring to something from one of the knights of the round table stories

Sounds a lot like Santa Claus.
Stranger has a capital S. That might be significant.

In game of thrones, the stranger is one of the 7 gods.
Okay, so this one makes me think of the Order of the Garter, which has the Stranger Knight as a class.
The collar is composed of gold heraldic knots alternating with medallions showing a rose encircled by the Garter.
Stranger is Sandor Cleganes horse.
It might be any of the horses from GoT, or an episode in which Stranger appears. was a horse gifted to someone to see them delivered safely?
Okay, so what is a common point between roses and horses in GoT? Maybe a Tyrell horse?
Are the characters incidental?
So Loras Tyrell is "The Knight of Flowers", this is certainly in the GoT universe.

I try to make the guardians related to or in the spirit of the franchise of the riddle, but they have never been a clue themselves to the character, place, item, etc. that I am trying to point to in that property :)

Stranger does sound like it could very well be the Hound's horse.

Trotted between chimneys... The little birds often use chimneys as hiding places and travel routes, don't they?
Okay, so maybe this is a hint?

Another possible clue is the Brotherhood Without Banners and Lord Beric Dondarrion, since the Hound became a part of it, or the Hand's tourney, which Sandor was declared the winner of.
It might be a little bit of a stretch but Sandor Clegane was taking Arya Stark to her family at the Twins before the Red Wedding. He was looking to get the ransom money for her. Sandor Clegane refused to become a knight since he did not care for the idea of chivalry. The Twins kind of resemble chimney stacks from a distance. The two of them were traveling on a horse to arrive. This happened after the Brotherhood without Banners took the Hound captive.
